Hi, what tools do you use for mapping (excel, notepad)

Paper and pencil, then possibly a pure .txt document (actually using notepad)...

Aye, same here.

Pen & pencil for the actual map, then I keep notes about the area in a .txt file (written in notepad).

I was thinking of setting up a wiki for sharing info about nanny, but that would ruin the game a bit, wouldn't it?

Although an interesting idea, I really think it would ruin the game... Speaking for myself, I think hints and advice are great but you really should do the exploring yourself, or together in a party of course. The level here on Spamfunet is good methinks.
